Thai Salmon Cakes

1 lb. boneless, cooked salmon
1 T. chopped fresh ginger
1/2 C. chopped onion
1/2 C. chopped celery
1/2 C. chopped carrot
1 T. chopped jalapeno
3 T. lime juice
1 T. fish sauce (Thai)
1 C wasabi aioli
1/2 C. panko

Flake salmon. Finely chop veggies. Combine all ingredients, mix well.
Form into patties, coat with some panko crumbs and let them set in the
fridge for about 10 min. or so.  Just fry them in a little oil until
golden brown. I serve them with a chutney of some sort, usually a limey
mango one.

Wasabi Aioli
1 C. mayo
2 T. lime juice
2 T. horseradish
1/4 t. salt
1/4 t. white pepper
1 t. wasabi powder (to taste of course)
1 t. water

Mix wasabi pwd. with water to make paste, add to the rest of
ingredients, mix well
